A Miniature Delight!

Ingredients:
Apple Pie Filling:
- 2-3 apples, peeled and diced
- 2 tbsp butter
- 1/4 c brown sugar
- 1 tbsp cinnamon
- Juice of one lemon
- 1 tbsp water
- 1/2 tbsp cornstarch
Assembly:
- Store-bought pie dough
- 1 egg (for egg wash)
Brown Butter Glaze:
- 1/4 c butter
- 1 tsp vanilla extract
- 1 c powdered sugar
- 1/2 tsp cinnamon
Instructions:
Apple Pie Filling:
1. Peel and dice 2-3 apples.
2. In a pan over medium heat, sautƩ apples in 2 tbsp butter for 5 mins.
3. Add brown sugar, cinnamon, lemon juice, and water. Simmer for 5 mins.
4. Add cornstarch and simmer for an additional 5 mins.
Assembly:
1. Use a mason jar lid to cut out circles in store-bought pie dough.
2. Roll out scraps and cut into strips for the top layer.
3. Spoon apple pie filling onto the mini pie circles. Top with dough strips and coat in egg wash.
4. Bake at 350°F for 30-35 mins.
Brown Butter Glaze:
1. Brown 1/4 c butter over medium heat.
2. Add vanilla extract, powdered sugar, and cinnamon to the browned butter.
3. Drizzle the glaze over cooled cookies.

We made these this weekend and have to say, they may have ruined sliced apple pie for me forever! Crispy on the bottom with a gooey filling with some crunch from the apples and the lattice top! Works well on a parchment lined cookie tray or unlined and smear a little salted butter under the cookie before baking for a crispier bottom with a buttery taste. So good Mal! Thanks!
