Instead of throwing out your overripe bananas, let's make the best breakfast cookies in the game. I prefer to eat these for breakfast, as a quick pick-me-up, or even a dessert. Whenever I make these, I shamelessly eat five a day.
For breakfast, I pair the cookie with a cup of greek yogurt. This is definitely my favorite way to start the day. For a quick snack or dessert, I pull these out of the fridge (if I am feeling crazy I will pop them in the microwave for a few seconds).

This cookie hits every mark for a ~balanced~ breakfast.
Oats- simple carbohydrate, packed with fiber, rich in antioxidants, & keep you fuller for longer.
Bananas- full of nutrients & antioxidants.
Protein Powder- one of the easiest sources of protein, aids in muscle growth and exercise recovery.
Cocao Powder- Believe it or not, there are MANY health benefits to chocolate. Cacao powder provides more nutrition than cocoa powder and can be a healthier substitute in recipes. Cacao powder is also an excellent source of iron, protein, magnesium, potassium, and fiber.
All Natural Peanut Butter- an excellent source of healthy fats, good protein source, & rich in vitamins/minerals.
Maple Syrup- high in antioxidants.
Optional ingredients-
Baking Powder- no health benefits here, just allows the cookie to rise.
Chocolate Chips- the star of the show (in my humble opinion. Not only do they taste amaazzzzzinnnng, but there are a handful of health benefits, such as: high in antioxidants, supports functions of your heart, lowers blood pressure, and the list goes on! Remember, everything is good in moderation so make sure you ALWAYS have chocolate in your diet :)

All of the ingredients you need to make this amazing recipe:
2 Ripe Bananas-- the more brown they are, the sweeter the cookie will be!
2 c Old Fashioned Oats
2 scoops of Protein Powder -- I used vanilla
2 tbsp Cocao Powder
¼ c All Natural Peanut Butter -- the kind with 2 ingredients (peanuts + salt) we want it to be runnnnny!
¼ c Maple Syrup
½ tsp Baking Powder *optional
½ c Dark Chocolate Chips *optional
