A perfect bite of summer flavors!

Step into the Munchies by Mallory kitchen, where the aroma of freshly baked cookies fills the air! Today, I'm thrilled to share a recipe that's close to my heart: Mini S'mores Chocolate Chip Cookie Bites. Picture this: a tiny, golden cookie cup filled with gooey marshmallow, rich chocolate, and a hint of graham cracker crunch. These little treats are like a bite-sized campfire, bringing back memories of toasting marshmallows under the stars.
I love making these for friends and family, especially when we're gathered around the fire pit, sharing stories and laughter. But they're just as perfect for a cozy night in with a good movie and a warm blanket. So grab your apron and let's bake up some sweet memories!
Ingredients
Unsalted Butter:Ā Unsalted butter allows you to control the salt content in your cookies, ensuring they are not overly salty. It also provides a rich, buttery flavor that enhances the overall taste of the cookies.
Brown Sugar:Ā Brown sugar adds moisture to the cookies, resulting in a chewy texture. It also contributes a subtle molasses flavor, which pairs wonderfully with the chocolate and marshmallow in the s'mores cookies.

Marshmallows: halved marshmallows are tucked inside the cookie dough, creating pockets of sweet, gooey marshmallow goodness throughout each cookie. When baked, the marshmallows melt and caramelize, adding a delightful chewiness and a burst of classic s'mores flavor to every bite.

S'mores have been a cherished summer treat for generations, evoking memories of crackling campfires and laughter-filled nights under the stars. Traditionally made by sandwiching a toasted marshmallow and a piece of chocolate between two graham crackers, s'mores are the epitome of simple pleasures.
The Perfect Fusion: S'mores and Chocolate Chip Cookies:
What happens when you merge the classic s'mores with the timeless charm of chocolate chip cookies? Magic happens! S'mores stuffed chocolate chip cookies offer the best of both worlds, combining the comforting familiarity of a chocolate chip cookie with the gooey, marshmallow-filled goodness of a s'more. These decadent treats are a delightful twist on the traditional cookie, providing a burst of nostalgia and a heavenly medley of flavors.
Instructions:
1. Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. Brown the butter:Ā In a saucepan over medium-low heat, melt the butter. Continue to cook, stirring occasionally, until the butter turns a golden brown color and has a nutty aroma. Remove from heat and allow to cool slightly.
Ā 3. Mix sugars and butter:Ā In a large mixing bowl, combine the brown sugar, granulated sugar, and slightly cooled brown butter. Mix until well combined.
4. Add eggs and vanilla:Ā Add the egg, egg yolks, and vanilla extract to the sugar-butter mixture. Mix until smooth and creamy.
5. Combine Dry Ingredients:Ā In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

6. Combine Wet and Dry Mixtures:Ā Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the semi-sweet chocolate chips.
7. Chill the Dough:Ā Cover the cookie dough with plastic wrap and refrigerate for at least 30 minutes, or up to 24 hours, to allow the flavors to meld and the dough to firm up.
8. Preheat the Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
9. Scoop the dough - using a tablespoon sized cookie scoop, scoop the dough into a greased mini muffin pan.
10. Bake the cookies: Bake the cookies for 7-8 minutes. You will want the cookies to be 90% the way cooked when you pull them out.
11. Make the cookie bowl: Using a shot glass, or something similar size, push down into each cookie to make a bowl.
12. Add a Graham Cracker: Add 1/2 teaspoon of crushed graham crackers into each cookie bowl.
13. Prepare Marshmallows:Ā Cut a marshmallow in half horizontally using kitchen shears or scissors.
14. Top with the marshmallow & roast:Ā Place the sticky side of the marshmallow halves into the cookie bowl. Place the cookies back in the oven & set to broil. Keep your eyes on the marshmallows, they can burn quickly.
15. Finishing Touches:Ā Remove the cookies from the oven and immediately top each bite with one Hershey piece. Then top with additional graham cracker pieces.
16. Let Cool: Allow the cookies to cool in the pan for 20 minutes before popping out of the mini muffin pan.
Storage Tips:
To store these cookies, allow them to cool completely, then place them in an airtight container at room temperature. They should stay fresh for up to 3-4 days.
For reheating, you can warm them in the microwave for a few seconds to get that gooey, melty texture back. Alternatively, you can reheat them in a preheated oven at 350°F for about 5 minutes. Remember to keep an eye on them to prevent overcooking. Enjoy!
