Pumpkin Streusel Bread

It is like pumpkin bread and coffee cake had a beautiful love child.

This bread checks off every box. It is a moist, spicy bread with a beautiful cinnamon sugar topping. It is yam PACKED with all of the delicious fall flavors.

What makes it to so moist?

The pumpkin!! This is just another reason why pumpkin is the BEST! Especially for baking. It makes this bread so moist and delicious. Also, when baking with pumpkin, it is almost impossible to overcook it. I may or may not have left this recipe in the oven for two hours before...


What kind of pumpkin do I use?

I prefer to use Libby's canned pumpkin puree. You can make your own pumpkin puree from a pie pumpkin if you are feeling boujee but I am lazy! But, DO NOT use pumpkin pie mix. We want the raw pumpkin without the extra sugar.


What is a streusel topping?

Also known as a crumble topping, it is a buttery-sugary-flour topping for a baked good. It adds another element to any baked good by adding in an additional texture.


Pumpkin Streusel Bread


Ingredients

  • 2 eggs - at room temperature

  • 1/2 cup granulated sugar

  • 3/4 cup brown sugar

  • 1 1/2 cup pumpkin puree

  • 1/2 cup vegetable oil - or your preferred oil

  • 1/4 cup milk

  • 1 3/4 cup all purpose flour

  • 2 teaspoons cinnamon

  • 1 teaspoons pumpkin pie spice

  • 1 teaspoons baking soda

  • A pinch of salt

Streusel Topping:

  • 2 tablespoons melted butter

  • 1/3 cup flour

  • 1/3 cup sugar

  • 1 teaspoon cinnamon
