Cinnamon-y, sweet, and easy... What could be better?

There is nothing that beats a classic... besides this spin on a classic snickerdoodle ;)
This recipe is already a classic for me because it is just that good! I absolutely love snickerdoodle but sometimes I am just too lazy to roll each cookie into a ball and then coat it in a cinnamon sugar mixture. It takes up so much time!
Okay, I know I am being dramatic, but this is a time saver (even if it is only a few minutes). Trust me, once you try this recipe it will be hard for you to ever make your snickerdoodle another way.
What is a snickerdoodle cookie?
In my opinion, a snickerdoodle cookie is the sugar cookie's hotter sister. A snickerdoodle typically has a beautiful cracked surface with a cinnamon sugar topping. It has the same base ingredients as a sugar cookie but is made with cream of tartar. Adding this spice brings some tanginess to the cookie. This cookie is the perfect balance of sweet and tangy.
What is cream of tartar?
Surprisingly, cream of tartar is not creamy at all. Rather, it is a white powder. Cream of tartar is a result of the wine-making process. It is the crystals from the inside of the barrels that make this spice. Adding this to a snickerdoodle cookie gives the cookie a little bit of tanginess & allows the cookie to be moist.
What size pan do you recommend?
I used an 8x8 baking dish for this recipe. You can definitely use a 9x9, but it will be a little bit thinner. Additionally, you can double this recipe and you a 13x9.

All of the ingredients to make this delicious treat:
1/2 cup Melted Butter
1 Egg (room temperature)
1/2 cup Granulated Sugar
1/3 cup Brown Sugar
1 tsp Vanilla Extract
1 cup Flour
1/2 tsp Cream of Tartar
1/2 tsp Salt
Cinnamon Sugar Topping
1/4 cup Granulated Sugar
2 tsp Cinnamon

Made these this weekend to bring over to a family dinner and they were such a hit! Way easier than rolling out individual snickerdoodles!
