The fluffiest muffin in town!

When it comes to pastries, I ALWAYS choose the option that involves chocolate. What can I say I am a certified CHOCOHOLIC!! These muffins are light, fluffy, & perfectly sweet. These bakery style chocolate chip muffins will definitely be on my breakfast baking rotation! So let's save some money at the cafe & make your favorite muffins at home.
Ingredients:
Melted unsalted butter - Using melted unsalted butter in this recipe offers several advantages. It provides control over the salt content, ensures a uniform texture throughout the muffins, enhances the overall taste with its richer flavor, and adds moisture for a tender and delicious final product.

Instructions:
1. Pre-heat the oven - Preheat the oven to 400°F (205°C) and line a muffin tin with paper liners or grease the cups.
2. Beat the butter & sugar - In a microwave-safe bowl, melt the butter in the microwave for about 1 minute. Once melted, add the granulated sugar and whisk together for 1-2 minutes until fully combined and slightly pale in color.
3. Add in the remaining wet ingredients - Add the eggs to the butter and sugar mixture, one at a time, mixing well after each addition. Stir in the vanilla extract, sour cream, and milk until the mixture is smooth and well combined.

4. Mix the dry ingredients - In a separate bowl, whisk together the all-purpose flour, baking powder, and salt until evenly distributed.
5. Combine the wet & dry mixtures - Gradually add the dry ingredients to the wet ingredients, folding gently with a spatula until just combined. Be careful not to overmix, as this can result in tough muffins.

6. Chocolate time - Fold in both the regular and mini chocolate chips until evenly distributed throughout the batter. If you do not have both chocolate chips or do not want to use both, you can use 1 1/2 cups of your desired chocolate chips.

7. Scoop into pan - Divide the batter evenly among the lined or greased muffin pan, filling each about 3/4 full.
8. Bake to Perfection - Bake in the preheated oven for:
Mini muffins: 15-18 minutes
Standard muffins: 24-26 minutes
Large muffins: 32-35 minutes
or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
9. Let the muffins cool - Remove the muffins from the oven and allow them to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Turned out really well! Easy to follow instructions (the microwave time for the butter is literally spot on). A good way to use up sour cream because our house never ends up using it all. Muffins end up soft on the inside but slightly crisp on the top which I loved!
These are so good and easy to make! I didnāt have enough chocolate chips so I added some butterscotch chips and they came out amazing. I also only cooked them for 17 mins and they were perfectly done
