Homemade NYC-Style Bagels

Hey bagel aficionados! Let's talk about the art of making NYC-style bagels at home. Wondering why they're different from regular bagels? Eager to customize with your favorite toppings? Let's dive in and make some deliciousness!
Ingredients:
1 1/2 cups warm water
2 tsp dry active yeast
4 1/2 tsp granulated sugar
3 1/2 cups bread flour
1 1/2 tsp fine grain salt
1 egg (for egg wash)
Your favorite bagel toppings
The NYC-Style Difference:
NYC-style bagels boast a chewy texture and golden crust, achieved by a unique boiling process before baking.
Instructions:
Activate the Yeast:
1. Heat water to 110-115°F.
2. Mix 1/2 cup water with yeast and sugar. Allow it to sit for 5 minutes until it bubbles, then mix until everything dissolves.
Make the dough:
1. Whisk flour and salt in a large bowl.
2. Create a well in the flour, pour in the yeast-sugar mixture, and add an extra 1/2 cup of water.
3. Mix with your hands. Adjust water if the dough is too dry. I used 1 1/2 cups of water but you can use more/less depending on the environment in your house.
4. Transfer the dough to a floured surface and knead for 10 minutes.
5. Place the dough in a greased bowl, cover with a damp tea towel, and let it rise in a warm spot for one hour until it doubles in size.

Shaping Your Bagels:
1. Punch down the dough, let it rise for another 10 minutes.
2. Uncover the dough, place onto a cutting board & cut it into 8 equal pieces.
3. Roll each piece into a ball and use your flour-coated thumb to create a 1-1 1/2 inch hole in the center.
3. Place the bagels on a greased baking sheet, cover, and let them rise for another 10 minutes.
Boiling and Baking:
1. Preheat your oven to 425°F and bring a pot of water to a boil.
2. Boil the bagels, flipping after one minute on each side.
3. Transfer them back to the baking sheet, cover with egg wash and your favorite toppings.
4. Bake at 425°F for 20-25 minutes.

Blueberry - before cutting into 8 sections, add in fresh of frozen blueberries to the dough & knead into the dough.
Cinnamon Crunch - before cutting into 8 sections, add in cinnamon & sugar to the dough & knead into the dough. Then top with a cinnamon streusel.
Freshness & Preservation:
Bagels stay fresh for 2-3 days. Freeze them for longer shelf life and toast to revive.
