Celebrate spring with these delightful lemon loaf

Welcome to a burst of springtime flavor with my Lemon Ginger Loaf! This delightful loaf combines the zesty freshness of lemon with the warm spice of ginger for a treat that's perfect for welcoming the season. The unique method of rubbing lemon zest into sugar enhances the lemony goodness in every bite, while the glaze adds a sweet and tangy finish. Let's bake up a taste of spring together!

Ingredients:

Lemon Loaf:

  • Zest of 2 lemons

  • 1 cup granulated sugar

  • 3 eggs

  • 1 cup sour cream

  • 1/2 cup vegetable oil or melted butter or coconut oil

  • Juice of 2 lemons

  • 1 tablespoon minced ginger

  • 1 1/2 cups all-purpose flour

  • 2 teaspoons baking soda

  • 1/2 teaspoon salt


For the glaze:

  • 1 cup powdered sugar

  • Juice of 1 lemon



What makes this a ā€œspringā€ recipe?

Technically, lemons are in season November - April, so I like to use lemons during this time frame. This light, fluffy bread is the perfect loaf to make in the spring! But this recipe can ABSOLUTELY be made all year long!


The beauty of a one bowl recipe:

I love an easy recipe that only requires ONE bowl! Saves yourself time & energy on dishes.



Baking Instructions:

1. Preheat your oven to 350°F (175°C) and line a 9x5-inch bread loaf pan with parchment paper.


2. Zest the lemons using a zester or grater. In a bowl, combine the lemon zest and granulated sugar. Using your hands, rub the zest into the sugar. This releases the oils in the zest, intensifying the lemon flavor and infusing the sugar with lemon fragrance.


3. In a large mixing bowl, whisk the lemon-sugar mixture with the eggs until smooth and pale yellow.


4. Add the sour cream, vegetable oil (or melted butter or coconut oil), lemon juice, and minced ginger to the bowl. Mix until well combined and smooth.


5. Gently fold in the flour, baking soda, and salt until just combined. Be careful not to overmix; a few lumps are okay.

6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.


7. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean. Keep an eye on the loaf to prevent excessive browning; you may need to cover it with foil halfway through baking.


8. Remove the loaf from the oven and allow it to cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.


9. While the loaf is cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar and lemon juice until smooth.


10. Once the loaf is completely cool, drizzle the glaze over the top. Slice and enjoy this moist and flavorful Lemon Ginger Loaf!
