Ingredients:


Graham Cracker Crust:

- 8 Graham crackers

- 3 tbsp melted butter

- 1 tbsp granulated sugar


Cheesecake Filling:

- 12 oz room temperature cream cheese

- 1/3 cup granulated sugar

- 1/2 cup melted (and cooled) white chocolate chips

- 1/4 cup sour cream

- 1 tbsp vanilla extract

- 2 eggs


Whipped Topping:

-1/2 cup heavy whipping cream

- 2 tbsp powdered sugar


Topping:

- 1 pint of strawberries





Instructions:


1. Graham Cracker Crust:

Pulse 8 Graham crackers in a food processor until they turn into crumbs. Combine with 3 tbsp melted butter and 1 tbsp granulated sugar. Press this mixture into cupcake liners and bake at 325°F for 5 minutes.


2. Cheesecake Filling:

In a stand mixer, beat 12 oz of room temperature cream cheese with 1/3 cup granulated sugar until smooth. Add 1/2 cup melted and cooled white chocolate chips, 1/4 cup sour cream, and 1 tbsp vanilla extract. Mix until smooth. Add eggs one at a time, mixing well. Scoop onto the Graham cracker crust and bake at 325°F for 15-18 minutes.


3. Chill and Decorate:

Allow the mini cheesecakes to cool, then transfer them to the fridge for 2-3 hours. Prepare the homemade whipped topping in a stand mixer & beat the whipping cream and sugar together until peaks are formed. Transfer to a piping bag. Just before serving, top each cheesecake with a dollop of whipped cream and a strawberry, creating a festive Santa hat appearance.

Just made some cheesecakes yesterday and they turned out lovely. I only have one question and I was hoping you would know the nutritional facts? Super cute and easy cheesecake to make as it being my first time making cheesecakes.
