Looking for a tastier, more affordable alternative to Starbucks? These homemade egg bites are a game changer! To be honest, I am not the biggest fan of Starbucks in general. I think the only time I get it is at the airport lol. Typically, I opt for supporting local or making my coffee/breakfast at home. But, if you are buying these bad boys every day, lets SAVE YOUR MONEY & make them at home!

Ingredients:

  • 6 whole eggs

  • 1 cup cottage cheese

  • 1 cup shredded Gruyere cheese

  • 1 tsp hot sauce

  • Salt and pepper, to taste

  • 4 slices bacon

Instructions:

1. Preheat your oven to 300°F (150°C). Place a shallow dish filled with boiling water on the lower shelf of the oven.


2. In a food processor or blender, combine 6 whole eggs, 1 cup cottage cheese, 1 cup shredded Gruyere cheese, 1 tsp hot sauce, and salt and pepper to taste. Blend for 30 seconds to 1 minute, until smooth.


3. Grease a muffin tray and pour the egg mixture into each cup, filling them about 3/4 full.


4. Cook the bacon until crispy, then finely chop it. Sprinkle the chopped bacon on top of each egg-filled muffin cup.

5. Place the muffin tray on the shelf above the water dish in the oven. Bake for 25-30 minutes, or until the eggs are set and slightly puffed.


6. Remove the egg bites from the oven and let them cool for a few minutes. Use a knife to loosen the edges of the egg bites and remove them from the muffin tray. Serve warm or at room temperature.
