Every-bunnyās favorite cake!

Ahhhh, the shift of seasons. I always get so excited every year when it is the beginning of a new season. Living in Ohio, I truly appreciate when the weather is warmer and the skies are no longer grey. Another reason I get so excited for seasonal shifts is new seasonal produce! Carrot cake is traditionally made in the Spring and served around Easter, so I truly couldnāt wait to make this! Technically, it is still winter BUT carrot cake is one of my boyfriends favorite desserts so I wanted to surprise him for his birthday. This recipe is a copycat for the popular US chain Nothing Bundt Cakes. I am a huge fan of Nothing Bundt Cake & I love their bundt cakes so much. As a home baker, I really try my best to make as much as possible at home. This recipe is a pretty close copy cat to their bundt cake & I was thoroughly impressed with the results!
Ingredients:
Bundt Cake:
1 Box Carrot Cake Mix or Spice Cake Mix (I used Duncan Hines)
1 packet (3.4 oz) of Instant Vanilla Pudding (I used Jello)
4 eggs
1/2 cup neutral oil or melted butter (I used vegetable oil)
1 c full fat sour cream
1/4 c pineapple juice or milk
1 c finely grated carrots
1/2 c crushed pineapples (optional)
Cream Cheese Frosting:
8 oz room temperature cream cheese
1/4 cup room temperature unsalted butter
1 teaspoon vanilla extract
2 cups powdered sugar
What is Nothing Bundt Cakes?
Nothing Bundt Cakes is a US-based chain that specializes in Bundt cakes ā shocking I know. They are slowly taking over the US & I am seeing them everywhere!
Bundt Sizes & Baking Variations:
Bundtini - 3 inches
Bundtlet - 4 inches
Bundt- 10 inches
What is carrot cake?
Carrot cake is very similar to a spice cake but traditionally has carrots, nuts, & pineapple. Typically is paired with a light and fluffy cream cheese frosting. The flavor of a carrot cake is moist & packed with warm spices - such as cinnamon, nutmeg, & ginger.Ā
Why is there pineapple in this recipe?
Pineapple adds additional moisture and flavor to the cake. If you are not fan of pineapple, you can skip adding the crushed pineapple and substitute the pineapple juice for milk.Ā

What makes this a āspringā recipe?
This recipe can ABSOLUTELY be made all year long! Since carrots are associated with Easter (thanks Easter Bunny), a lot of people associate carrot cake with Easter. The flavors are perfect for the springtime too.
The beauty of a one bowl recipe:
I love an easy recipe that only requires ONE bowl! Saves yourself time & energy on dishes.
Baking Instructions:
1. In a large mixing bowl, combine the cake mix, pudding packet, sour cream, oil (or melted butter), eggs, sour cream, pineapple juice (or milk), carrots, & pineapple.Ā
2. Using a whisk, or mixer, mix until the batter is completely combined.
3. Pour into a greased Bundt dish. I used mini āBundtletā sized pan & this made 6-8 āBundtlets.āĀ
4. Bake at 350°F forĀ
Bundtini - 25-35 minutes
Bundtlet - 40-50 minutes
Bundt - 60-70 minutes
5. Remove from the oven & allow to cool for 20 minutes.

6. Flip and allow the bundt cake to release from the pan.Ā
7. Allow the cake to fully cool ā I like to wrap mine in plastic wrap & place them in the fridge overnight. This locks in the moisture of the bundt cake.
8. Make the icing - in a stand mixer beat together the cream cheese, butter, and vanilla extract.
9. Once smooth, slowly add in the powdered sugar.
10. Transfer the icing into a piping bag.
11. Ice the cake - I copied the same method as Nothing Bundt Cakes with their āSpiderā design. I filled the center with icing & added lines into each crease.
