Ingredients:
- 2 eggs
- 1/2 c granulated sugar
- 3/4 c brown sugar
- 1 1/2 c pumpkin puree
- 1/2 c vegetable oil
- 1/4 c milk
- 1 3/4 c all-purpose flour
- 2 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1 tsp baking soda
- Pinch of salt
Cheesecake Swirl:
- 4 oz room temperature cream cheese
- 2 tbsp granulated sugar
- 1 tbsp flour
- 1 tsp milk
- 1 tsp vanilla extract
Instructions:
1. Whisk eggs with granulated and brown sugar.
2. Add pumpkin puree, vegetable oil, and milk. Fold in flour, cinnamon, pumpkin pie spice, baking soda, and salt.
3. Pour half of the batter into a parchment-lined bread dish.
Cheesecake Swirl:
4. Combine room temperature cream cheese, granulated sugar, flour, milk, and vanilla extract.
5. Spread an even layer in the middle and top with the remaining bread batter.
6. Bake at 350°F for 60-70 minutes.
7. Allow the bread to sit for one hour before slicing.
