Ingredients:

  • 1 cup brown sugar

  • 1/2 cup melted unsalted butter, vegetable oil, or coconut oil

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1/3 cup sour cream

  • 1/3 cup milk

  • 1 cup finely shredded carrots

  • 2 cups all-purpose flour

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

Cream Cheese Filling:

  • 6 oz cream cheese, softened

  • 3 tablespoons granulated sugar

  • 2 tablespoons all-purpose flour

  • 1 tablespoon milk

  • 1/2 teaspoon vanilla extract



What is carrot cake?

Carrot cake is very similar to a spice cake but traditionally has carrots, nuts, & pineapple. Typically is paired with a light and fluffy cream cheese frosting. The flavor of a carrot cake is moist & packed with warm spices - such as cinnamon, nutmeg, & ginger.Ā 


What makes this a ā€œspringā€ recipe?

This recipe can ABSOLUTELY be made all year long! Since carrots are associated with Easter (thanks Easter Bunny), a lot of people associate carrot cake with Easter. The flavors are perfect for the springtime too.


The beauty of a one bowl recipe:

I love an easy recipe that only requires ONE bowl! Saves yourself time & energy on dishes.



Baking Instructions:


1. Preheat the oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners.


2. MixĀ the brown sugar and melted butter (or oil) in a large bowl until well combined.


3. AddĀ the eggs and vanilla extract, and whisk until smooth.


4. StirĀ in the sour cream and milk until fully incorporated.


5. FoldĀ in the shredded carrots until evenly distributed.


6. In a separate bowl, whisk together the flour, cinnamon, baking powder, and salt.


7. Gradually addĀ the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.

8. FillĀ each muffin cup with batter, about 3/4 full.


9. PrepareĀ the cream cheese filling by beating the cream cheese, sugar, flour, milk, and vanilla extract until smooth.


10. SpoonĀ a dollop of the cream cheese mixture onto the center of each muffin.


11. BakeĀ for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.


12. CoolĀ the muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely.
